10:30 – 11:30am: The Chocolicious Origins of Chocolate: Where Did Your Easter Egg Come From?
From grinding the cocoa beans to tasting your finished product, festival organiser and founder of Celebrate Cacao, Nicola will guide children through the process of preparing a special chocolate drink just like the ancient Mayans and Aztecs did, while revealing the secrets of where the chocolate in your Easter Eggs comes from.
This session is ideal for children ages 5-11, but everyone is welcome.
11:45am: Creating Beautiful Chocolate Bonbons
Discover the secrets of making confectioner-quality chocolate bonbons in a demonstration by Jim Fisher, head chef and co-owner of Exeter Cookery School. Sit back and relax while he talks about the dark (or milk!) art of tempering chocolate to give that characteristic ‘snap’ and shine.
Jim will show you how to decorate your moulds to give a stunning finished product, followed by making the perfect thin shell. You’ll find out how to fill them and finally cap them off, and there might just be some available to sample at the end of the session! We look forward to seeing you.
1pm: A History of Chocolate and Tasting With Seed Chocolate
Join James from bean-to-bar chocolate maker and festival exhibitor Seed Chocolate for a brief history of chocolate and a tasting journey through their range of amazing, award-winning, handcrafted chocolate.
1:45pm: The Delights and Challenges of Bean-To-Bar production in Salcombe
Join the team from Salcombe Dairy as they talk you through how they make chocolate from bean-to-bar. You will have the chance to see some of the equipment that they use aswell as hear them talk about some of the challenges they have faced and high points. A great opportunity for aspiring chocolate makers to ask any burning questions.
2:30pm: Beautiful Chocolate Decorations You Can Make At Home
Jim Fisher, head chef tutor and co-owner of Exeter Cookery School, will be sharing some simple but eye-catching ideas for creating decorations and embellishments out of chocolate. Take your cakes and desserts to a new level by adding beautiful coloured curls and quills, made using simple techniques and a minimum of equipment. Pull up a chair and enjoy learning more about the joys of working with chocolate!
3:45pm: Craft Chocolate Explained, and Guided Chocolate Tasting
Join Nicola, festival organiser, chocolate taster and educator to explore why craft chocolate is the best choice and learn the basics of what is fine chocolate and how to taste chocolate like a pro! This session includes samples of craft chocolate for you to taste.
