This chocolate bar started out as a handful of organic trinitario cocoa beans grown on the award-winning Hacienda San Jose Plantation in Los Rios, Ecuador. This plantation has been awarded for having the highest quality beans in Ecuador. The beans make their way to the U.K. where I carefully roast, winnow, stone grind, hand-temper and mould them in a process taking more than 72 hours.
The result is a light, clean chocolate with wonderful nutty notes.
The Hacienda San Jose Plantation is a family run plantation that is now in its 5th generation. It is committed to fair and sustainable farming practices.
This bar has only three ingredients and is dairy free, nut free and soy free.
